Vegetarian Fried Quinoa
With a cooking time of about 10-15 minutes, this Vegetarian Fried Quinoa can be the perfect dinner recipe to cook when you are in a hurry or you only have some simple ingredients in your pantry.
You may not know but thanks to its nutrient density and many health benefits – Quinoa is actually labeled as a “superfood” by health experts, which is why I try to incorporate quinoa and other superfoods in my cooking as much as possible. It is also a great substitution for rice. Plus it is really tasty and it doesn’t take much time to cook. Another benefit is that if you have some leftover quinoa you can always put it in the fridge and use it in another recipe at a later time.
I’m also sure you all have frozen veggies in your fridge, so now would be a perfect moment to use them, especially now when the most interesting and funny thing we are all doing at home is .. eating. I don’t usually cook with frozen food (I prefer going to the store more often and buy fresh vegetables even if that takes a little more time) but now we don’t have the option to go out as often as we usually do.
So take out these veggies from your fridge, add some quinoa and enjoy your perfect dinner recipe. As for the veggies feel free to experiment with whatever you have available. I personally included some mushrooms, sweet corn, red pepper, green beans, peas, onion, and carrots, and it turned out just perfect.
