Creamy Red Lentil Soup

Just carrots, onions, red lentils, red peppers, and some spices are all you need for a homemade Creamy Red Lentil Soup. It is made in only one pod and will feed your whole family. Moreover, Red lentils are super easy to cook (the quickest to cook of the lentil family) and packed with protein, iron, fiber, and B vitamins. They need no pre-soaking and cook very quickly. You only need to wash and “inspect” the lentils as on occasion, you’ll find small rocks mixed in with dried lentils.

If you haven’t cook red lentils until now, keep in mind that as they cook, they melt and dissolve, creating a delicious creamy texture. This is why red lentils turn into a great creamy soup super easy. It can be made in advance and then reheated, which is always a bonus.

Wanna know what is the secret ingredient of this colorful and super tasty soup – okay, I will tell you – Curry powder! As you know Curry powder has a unique flavor due to the combination of both savory and sweet spices. I would say this is an absolute feast for the senses. Do you agree? By the way, you can make curry powder on your own (I haven’t tried it yet) but I assume it won’t be that difficult at all as long as you have the right spices. But this is a story for another time. Let’s focus on this colorful heavenly delicious soup.
