Made with Italian sausage (my favorite), spinach, eggs, tomato sauce, mushrooms, and few other veggies, this casserole will become one of your most loved dinner/lunch recipes.

You can eat it now, or slice it up and toss it in the fridge for the coming week! Sounds perfect, right? Moreover, while this Italian Sausage and Spinach Casserole bakes in the oven, you will be left with some free time to mix together a big green salad or additional sauce.

But let’s get to the point.

Italian Sausage and Spinach Casserole Ingredients:

Italian Sausage: A pound of any type of sausage that you prefer (I used Italian sausage)

Veggies: I used a combination of mushrooms, spinach, onion, carrots, and garlic. Have I mentioned before that I LOVE garlic?

Herbs: I used oregano but you can use whatever you have on hand.  

Eggs: Finally, we will use a few eggs to bind the sausage and the rest of the ingredients together.

How to make this Italian Sausage and Spinach Casserole:

Sauté! In a large non-stick sauté pan, sauté the veggies  (onions, carrots, and mushrooms) and cook until the moisture has evaporated from the mushrooms and the vegetables have softened – about 7 – 10 minutes. Season with salt and a pinch of pepper. Stir to incorporate and then transfer to a greased baking pan.

The Italian Sausage – Decrease the heat to medium, and add the sausage to the now-empty skillet. Break up the meat with a spatula and cook, until it’s no longer pink –  about 5 to 7 minutes.

Spinach time: Add the spinach and stir to combine. Sauté for about 2-3 minutes. Add the minced garlic and cook for about 1 minute.

The sauce: our in the tomato sauce and add the oregano. Season with salt and pepper and stir well to incorporate. Then transfer the sausage mixture in the casserole pan.

Finally the eggs: Pour in the whisked eggs to the casserole pan and stir to combine.

Time to put it in the oven: Bake for approximately 20-25 min or until the eggs are browned on the edges.

Serve: Serve warm, garnished with extra fresh herbs and black pepper if desired.
