We are currently going through some very difficult time and I really hope you are doing well! Like most of you, we are staying home, trying to keep us and everyone around us safe. After all, staying at home is the least we can do now, right? And to be honest…it is not that bad. After all, there is one thing, that will always keep us smiling: Good Food ♡

It gives you a chance to spend time with your loved ones – time we usually don’t have, or it is just not enough. So, use this time to cook together, eat together, laugh, watch a good movie or just sit down together and read your favorite book. 

Now that we don’t get out much – only once a week to buy stuff that we need – I try to stick to simple recipes as not everything can last for more than a week (especially fruits and veggies).  There are a few things we always have in our fridge: Milk, eggs, cheese, yogurt, and butter. The only difference now is that we buy more of them. Of course, the whole point here is to avoid unnecessary trips out.

As for the fruits and the veggies – you can always find carrots, onion, potatoes, apples, and bananas at home. Here are a few other suggestions that can last long: pasta, canned beans, canned tomatoes, rice, quinoa, lentil 

This time however I will share with you this very simple breakfast/lunch/dinner recipe with something we also usually add to our shopping cart – AVOCADO.

I did that recipe for dinner, but you can most certainly prepare it for breakfast or lunch. Sounds even better. It’s super easy, colorful and tasty.

The key to any avocado recipe is starting with good avocados. It can be very tricky to pick out the best one when you’re at the grocery store or farmer’s market, but once you know what to look for and how to determine the best level of ripeness for your needs, you can always come home with a good avocado.

Tips: Pay attention to the avocados’ color. – Ripe avocados are typically dark, almost black with hints of green when they’re ripe. If you want to use the avocado as soon as you get home, choose one that is dark.

When you find an avocado that looks dark, you should still feel it and test its ripeness. Just hold it in the palm of your hand and squeeze gently. It should be a bit soft, but not too soft and mushy.

So, this Poached Egg and Avocado Toast recipe is so incredibly simple, but up until now, I wasn’t realizing that making poached eggs could be so easy. To be entirely honest with you, they seemed quite “scary” and awfully difficult to prepare. Well, no, there are not scary at all and certainly not difficult to prepare.
