One thing you need to keep in mind while cooking the zucchini is that they contain a lot of water (zucchini is actually about 90% water), so you need to drain them of the liquid really good before cooking. The best way to get rid of the excess water is to grate the zucchini, place them on a clean dishcloth and squeeze them very good.

From here throw your zucchini in a bowl and mix it with the other ingredients. Since they are so simple, I really recommend adding some fresh parsley and garlic. You can, of course, use dry herbs but using fresh ones is always a better choice.

Scoop them right out onto a hot skillet, and try to flatten them up like you would with a pancake.  Cook them until golden on both sides and you are ready to serve. Easy peasy, right?
