Spring is here guys and for those of you who are still finalizing plans for Easter brunch, or if you just happen to be looking for a yummy seasonal recipe, I’ve got the absolute winner for you – Zucchini Pie with Sweet Corn <3

It’s zucchini season …that’s a thing right?  Zucchini everywhere and I just love it! You might be wondering what to do with them but the great thing about zucchini is that you can use them to prepare something for breakfast, lunch, dinner or even a great healthy dessert.

One of my most favorite zucchini recipes is this wonderful Zucchini Pie with Sweet Corn! I made it yesterday for lunch and today I’m happy to share it with you! I hope you love it as much as I do!

The best thing is that you only need a few ingredients to make this tempting and easy recipe:

Zucchini, Sweet Corn, Mushrooms, Eggs, Butter, Onion, Cheese and some seasoning.

With Easter coming up, I guess you probably have a lot on your to-do list. Even that some of us won’t have the chance to spend the holiday with our families.. it doesn’t mean that we can’t prepare something delicious for those around us. I know that this year is a bit different and we won’t be able to gather with the whole family and friends but hey, we still can still have the holiday spirit, enjoy good food and meet with our distant relatives and friends…online.
